Spicy Garlic Bok Choy

For our Asian meals, we love having bok choy as our vegetable side. Growing up, my mom would mainly cook this with garlic, oyster sauce and soy sauce. Since Josh and I both love spicy food, I decided to add minced habanero (including the seeds) with this to give it a bit of heat.

Prep Time: 5 minutes

Cook Time: 10 minutes

Servings: 4

Ingredients:

  • 2 Tbsp oil

  • 2 garlic cloves, peeled and minced

  • 1 Tbsp oyster sauce

  • 2 Tbsp soy sauce

  • 1 Tbsp water

  • 4 bunches of baby bok choy, ends trimmed and cleaned



Directions:

  1. Heat oil in a medium pan over medium heat. Add garlic and stirring constantly until browned and fragrant.

  2. Add baby bok choy and carefully stir to cover with oil. Let cook for about 2 minutes.

  3. Add oyster sauce, soy sauce and water. Cover and cook for about 2 minutes.

  4. Uncover and continue to let it cook until the liquid is close to being evaporated. Stalks should then be soft to touch. This should take about 3 minutes.

  5. Remove from heat and serve with your favorite main dish or even just over warm rice.
